Turkey Bacon Brussel Sprout Bake
This Turkey Bacon Brussel Sprout Bake is the perfect hearty and healthy side dish on a cold night. With lots of roasted sweet potatoes, sweet onion, mushrooms, turkey bacon and Brussel sprouts this recipe is full of complex carbs, fiber, and flavor.
Ingredients
- 13.5 Ounces Sweet Potato
- 14 Ounces Brussel Sprouts
- 8 Ounces Sliced Crimini Mushrooms
- 1/2 Small Sweet Onion (4.3 oz)
- 6 Slices Trader Joe's Peppered Uncured Turkey Bacon
- 1 Tbsp Balsamic Vinegar
- 3/8 Tsp Salt
- 1/2 Tsp Garlic Powder
- 1/4 Tsp Cinnamon
- 1/4 Tsp Onion Powder
- 1/8 Tsp Paprika
- 1 Pinch Black Pepper
- Coconut Oil
Instructions

Preheat oven to 450 Fahrenheit.

Cut sweet potato into 1/2-1" cubes. Cut brussel sprouts into quarters.

In separate bowls season the sweet potatoes, mushrooms, and Brussel sprouts. Season sweet potato with 1/4 tsp cinnamon, 1/8 tsp paprika, and 1/8 tsp salt. Season mushrooms with 1 tbsp balsamic vinegar and a dash of salt. Season brussel sprouts with 1/4 tsp salt, 1/2 tsp garlic powder, 1/4 tsp onion powder, and a pinch of black pepper

Put seasoned sweet potatoes, mushrooms, and brussel sprouts on a baking sheet lined with foil and sprayed lightly with coconut oil. Bake 20-25 minutes or until brussel sprouts are browning and sweet potatoes are tender.

Meanwhile, dice the turkey bacon and onion into 1/4 inch squares then pan fry them on low-medium heat until the turkey bacon is crisp and golden, about 5 minutes.

Remove roasted vegetables from the oven and mix together with turkey bacon and onions. Serve!
Notes
- I used Trader Joe's Peppered Uncured Turkey Bacon in this recipe, but you can substitute a turkey bacon of your choosing.
