Easy Cauliflower Fried Rice
This Easy Cauliflower Fried Rice tastes like the real deal! Take it from my coworkers who didn't know it was cauliflower! It is super easy to prepare and utilizes common household ingredients. Try it out!

Ingredients
- 16 Ounce Bag Cauliflower Rice
- 16 Ounce Trader Joe's Frozen Organic Foursome Vegetable Medley
- 1 Tbsp Minced Garlic
- 3 Tbsp Soy Sauce or Coconut Aminos
- 2 Eggs
- 3/4 Tsp Salt
- 1/2 Tsp Black Pepper
- 1/2 Tbsp Ghee or Grass-Fed Butter (optional)
- Coconut Oil Spray
Instructions

Begin heating a large skillet on medium heat and spray lightly with coconut oil.

Scramble two eggs in a small bowl and pour onto skillet. Cook for 1 minute.

Next add Trader Joe's Frozen Organic Foursome Vegetable Medley and cook for 2-3 minutes before adding all remaining ingredients.

Cook for an additional 5-10 minutes or until cauliflower is tender.

Add additional salt and pepper to taste and enjoy!
Notes
- Trader Joe's Frozen Organic Foursome Vegetable Medley can be subbed for 4 ounces each of diced carrots, corn, green beans, and pea.
