Miso Ginger Salad
This creamy dressing packs a kick of ginger and a touch of sweetness. Made with fresh ginger, greek yogurt, miso paste, and cashews, it is oil-free and low in fat. Try it on top of a broccoli slaw or my Asian Salad.

Ingredients
- 2 Inch Cube Fresh Ginger
- 3 Tbsp Fage 2% Plain Greek Yogurt
- 3 Tbsp Cashews Pieces (25g)
- 1 Tbsp Miso Paste
- 1 Shallot (20g)
- 2 Cloves Fresh Garlic (about 1.5 tsp minced)
- 1 Tbsp Water
- 2 Tbsp Apple Cider Vinegar
- 2 Tsp Erythritol (or coconut sugar)
Instructions

Place all ingredients in blender or food processor and blend until smooth.
