Chimichurri Chicken and Avocado Salad
This bed of mixed greens is topped with bell pepper, avocado, grilled chicken, onion, and super healthy, oil-free Chimichurri Dressing.

Ingredients
- 4 Ounces Grilled Chicken Breast
- 2 Cups Mixed Greens
- 1/4 Cup Red Bell Pepper, Chopped
- 3 Tbsp Red Onion, Chopped
- 2 Tbsp Avocado
- 1 Serving Chimichurri Dressing (see notes)
- Cilantro (optional)
Instructions

Fill a small salad bowl with all of the ingredients above.

Toss in the dressing and sprinkle on some cilantro (if desired) and you have yourself a meal!
