Berry and Herb Salad with Blackberry Yogurt Dressing
This Springtime salad is light, refreshing, and nutritious. With lots of berries, asparagus, fresh mint, and fresh basil it's full of antioxidants and flavor. Top it all off with some grilled chicken and a fresh and simple blackberry yogurt dressing and you have yourself one amazing meal!

Ingredients
Salad
- 4 Cups Mixed Greens
- 8 Ounces Grilled Chicken
- 8 Ounces Asparagus
- 12 Blackberries
- 10 Strawberries (quartered)
- 1/3 Small Avocado (3 tbsp)
- 1/3 Cup Chopped Basil Leaves
- 3 Tbsp Chopped Mint Leaves
- 1 Tbsp Lemon Juice
- 1 Tbsp Slivered Almonds
- 1 Pinch Salt
Dressing
- 8 Blackberries
- 1 Tbsp Plain 2% Greek Yogurt
- 2 Tbsp Balsamic Vinegar
Instructions

To prepare the asparagus, cut each stalk into 4 pieces. Heat a skillet on medium heat and cook for about 5 minutes. Then add lemon juice and a pinch of salt and continue cooking until tender and beginning to brown (about 2 more minutes).

To prepare the dressing put all ingredients in a blender or small food processor and blend until smooth.

Chop your basil and mint leaves and cut your avocado into small cubes.

Add mixed greens to a medium bowl and top with all ingredients. Then pour on the dressing and toss the salad to distribute evenly. Serve!
