Blueberry and Delicata Salad with Lemon Poppy Seed Dressing
A light and refreshing salad with a tangy homemade dressing.

Ingredients
Salad:
- 1 Pint Blueberries
- 1/4 Cup Shaved Almonds
- 10 Ounces Spinach
- 1 Small Delicata Squash
- 1/2 Tsp Cinnamon
Dressing:

Instructions

Heat your oven to 450 degrees Fahrenheit and place parchment paper over a baking sheet.

Cut your delicata squash in half and remove the inner flesh and seeds with a spoon.

Cut delicata squash into approximately 1/2″ x 2″ pieces and place on the baking sheet.

Sprinkle with cinnamon then bake for about 25 minutes or until soft and golden. Remove from the oven and let cool.

Add all ingredients to a large bowl and toss in the dressing (see recipe in notes).

Serve and enjoy!
