Pumpkin Seed Cauliflower Rolls
These pumpkin seed mini "bread" rolls are grain, oil, and guilt-free.
Servings 12 Small Rolls
Ingredients
- 2.5 Cups Cauliflower
- 1 Egg
- 2 Tbsp Pumpkin Seeds
- 1 Tbsp Flax Seed Meal
- 1 Tbsp Almond Flour
- 1 Tbsp Coconut Flour
- 1 Tsp Fresh Minced Garlic
- 1/2 Tsp Salt (optional)
- 1/4 Tsp Black Pepper
- 1 Tbsp Trader Joe's Everything but the Bagel Seasoning (optional)
- Olive Oil
Instructions

Preheat oven to 400 degrees Fahrenheit.

Add all ingredients except pumpkin seeds and Trader Joe's Everything but the Bagel Seasoning to the food processor and blend until smooth. Dough should be consistency of thin mashed potatoes. If needed add an additional tablespoon of coconut flour.

Add pumpkin seeds to food processor and blend briefly to mix seeds throughout dough.

Cover a baking sheet with parchment paper and spray lightly with olive oil.

Place 3 tablespoons balls of dough onto baking sheet and top with Trader Joe's Everything but the Bagel Seasoning or sesame seeds (if desired).

Bake for 25 minutes or until golden brown. Enjoy!
Notes
- You can sub sesame seeds and an extra dash of salt for Trader Joe's Everything but the Bagel Seasoning
