Healthyish Oatmeal Cookies
Ingredients
Dry Ingredients:
- 2 Cup Rolled Old Fashion Oats
- 1 Cup Whole Grain Wheat Flour
- 1/2 Cup Walnut Pieces
- 1 Cup Coconut Sugar
- 1/3 Cup Dried Cranberries
- 1 Tsp Baking Soda
- 1/2 Tsp Baking Powder
- 1 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 1/2 Tsp Salt (optional)
Additional Ingredients:
- 1/2 – 1 Cup Mashed Banana
- 4 Tsp Water
- 1 32 Ounce Wide Mouth Mason Jar
- Ribbon and Tag for Jar
Instructions
To Make the Jars as Gifts:

Layer your dry ingredients in the mason jar in the following order: salt, nutmeg, cinnamon, baking soda, baking powder, flour, coconut sugar, oatmeal, cranberries, and walnuts.

Be sure to press the ingredients down to compact them as you go, otherwise you will not be able to fit everything in the jar!

Do NOT add water or banana to the jar.

Screw on the lid and add a label with the following instructions.
To Make the Cookies Only:

Preheat oven to 350 degrees Fahrenheit.

Line a baking sheet with parchment paper.

Mix mashed banana and water in a large mixing bowl.

Add dry ingredients from the jar into the mixing bowl and mix ingredients together with your hands until a dough forms.

Shape the dough into 2 tbsp balls and place 1-2” apart on the lined baking sheet.

Use a fork to press the dough balls down into your desired cookie shape.

Bake for 10-12 minutes.

Cool for 5 minutes and enjoy!
Notes
- Cookies will not spread out when bake, so make sure to form them to your desired shape prior to baking.
- Amount of banana will depend on type of oats used and ripeness of banana—add more until a cookie dough texture is reached.
- Not a cranberry fan? Try substituting chocolate chips!
