Lemon Poppy Seed Protein Bars
These clean protein bars taste like delicious lemon shortbread cookies! They are packed with nutrient-rich superfoods like maca powder and chia seeds to support your mood, heart health, and digestion.

Ingredients
- 1 Scoop Vanilla Protein Powder of Choice
- 1/2 Cup Raw Cashews (soaked in water for at least 1 hour)
- 6 Pitted Dates (40g)
- 3 Tbsp Fresh Squeezed Lemon Juice
- 1/2 Tbsp Chia Seeds
- 2 Tsp Maca Powder
- 1 Tsp Poppy Seeds
Instructions

Pre-soak cashews in a cup of water for at least 1 hour (the longer the better).

Drain water from cashews and add them to a food processor. Add all other ingredients and blend until a dough forms.

Remove the dough from the food processor and press it into a square container.

Cut into 4 pieces and enjoy!
