Meatless Mexican Chili
Quick and easy meatless chili with no beans and lots of veggies for a wholesome low-carb meal.
Ingredients
- 2 Zucchini (475g)
- 1 Small Red Onion (100g)
- 1 Red Bell Pepper (70g)
- 1/2 Cup Trader Joe's Hot Pico De Gallo
- 3/4 Cup Whole Kernel Corn (canned)
- 1 Package Trader Joe's Beef-less Ground Beef
- 2 Tsp Lime Juice
- 2 Tsp Cumin
- 1 Tsp Salt
- 1 Tsp Paprika
- 1/2 Tsp Chili powder
- 1/2 Tsp Red pepper
Instructions

Core and cut red bell pepper into 1 inch by 1 inch slices. Then chop the red onion. Cut zucchini into 1/4 - 1/2 inch thick circular slices. Then cut the zucchini rounds in half.

Heat two large skillets on medium-high on stovetop and spray lightly with oil.

In the first skillet add diced bell pepper, onion, zucchini, 1/2 tsp salt, 1/2 tsp red pepper, and 1 tsp cumin. Sauté on medium-high until zucchini slices turn golden brown and tender.

In the second skillet add Trader Joe's Beef-less Ground Beef, Trader Joe's Hot Pico De Gallo, corn, and all remaining spices. Cook on medium until hot.

Combine both skillets and stir.

Add additional salt to taste and serve!
Notes
- The second skillet (with corn, pico de gallo, and beef-less meat) can be heated in microwave rather than on the stovetop if desired
