Oil-Free Vegan Mayo
An oil-free mayonnaise that contains no dairy, eggs, or artificial ingredients. It's super smooth and versatile. Try it on your sandwiches, sushi, egg salads, or wherever you please!

Ingredients
- 3 Tbsp Raw Cashews, Soaked
- 6 Ounces Soft Tofu (2 servings)
- 2 Tsp Lemon Juice
- 2 Tsp White Miso Paste
- 1 Tsp Dijon Mustard
- 1 Tsp Onion Powder
- 3/4 Tsp Garlic Powder
- Salt (if desired)
Instructions

If you haven't already done so, soak your cashews in water for at least one hour then drain the water.

Put all ingredients in a food processor and blend until smooth and creamy.

Notes
- You may also choose to add additional spices based on what you are using it for (i.e. sriracha, curry powder, paprika, etc.)
