Peanut Butter Chocolate Chip Protein Bars
These peanut butter chocolate chip protein bars are sweetened by dates and low in fat. Thanks to the coconut shreds and stevia sweetened chocolate chips they have a wonderful texture too. Give them a try!

Ingredients
- 90 Grams Pitted Dates (about 4-5 dates)
- 10 Tbsp PB2 (peanut powder)
- 1 + 3/4 Scoops MRM All-Natural Vanilla Whey Protein Powder
- 1/4 Cup Lets Do Organics Reduced Fat Unsweetened Coconut Shreds
- 3 Tbsp Egg Whites
- 28 Grams Lily's Stevia Sweetened Dark Chocolate Chips (about 2.5 tbsp or 120 chips)
- 2 Tsp Unsweetened Almond Milk (or more until dough forms)
- 1/4 Tsp Butter Extract (optional)
Instructions

Place pitted dates to a food processor or powerful blender and process until small chunks are formed.

Add whey protein, coconut shreds, PB2, egg whites, and butter extract to the food processor and blend until a chunky powder is formed.

Add 1 tsp of unsweetened almond milk and blend briefly. Check if dough sticks together when pressed between your fingers. If not, add more almond milk in 1 tsp increments.

Mix in chocolate chips by hand then remove dough from food processor.

Press dough into small square tupperware or press dough into a square shape by hand on top of a piece of parchment paper.

Cut into 6 bars and enjoy!

- I highly recommend Let's Do Organics for the reduced fat coconut shreds, MRM All-Natural Vanilla Whey Protein Powder, Lily's for the chocolate chips, and the original PB2. You can find these ingredients at most at Whole Foods or online.
