Plant-Based Kodiak Cake Pancake Mix
Fluffy whole-grain pancakes with less than 150 calories, 20g of carbs, and 13g of protein per serving. Just add water!

Ingredients
- 1 Cup Whole-Grain Wheat Flour
- 3 Servings Vanilla Pea Protein Blend of Choice (108g)
- 1.5 Tbsp Baking Powder
- 2 Tbsp Date or Coconut Sugar
- 3/4 Tsp Cinnamon
- 1/4 Tsp Nutmeg
- 1+ 7/8 Cups Unsweetened Almond Milk or Water
Instructions
Preparing the Pancake Mix

Mix all dry ingredients and store in a jar or tupperware until you are ready to use.
Making the Pancakes

To make the whole recipe, add the 1 + 7/8 cups of almond milk or water to the dry mix.

To make one serving, take 1/3 cup + 1 tbsp of the dry mix and add 5 tbsp of water or almond milk.

Heat a lightly greased skillet on medium and create 4” pancakes.

Cook for 3-4 minutes per side or until golden brown.

Serve with toppings of your choice!
Notes
- Need some topping inspiration? Start with fresh fruit like bananas, strawberries, or blueberries. Try adding PB2, almond butter, or a drizzle of molasses on top if you like a little more richness.
