Raw Ginger Beet Slaw
This colorful slaw is made with tons of raw veggies, fruit, and healthy fats. It makes for a perfect meal-prep dish since it will last in the fridge for nearly a week. Give it a try as a salad or a side!

Ingredients
- 3 Raw Beets, Shredded
- 3 Cups Carrot Shreds
- 4 cups Broccoli Shreds
- 2 Cups Shelled Edamame
- 2 Raw Zucchini, Shredded
- 1 Granny Smith Apple, Diced
- 1 Pink Lady Apple, Diced
- 2 Tbsp Ginger Root, Grated
- 1/3 Cup Balsamic Vinegar
- 1/3 Cup Raw Hazelnuts, Crushed
- Avocado (optional)
Instructions

Prepare all of your fruit and vegetables per the ingredient list above and then combine them in a large serving bowl.

Add minced ginger root, balsamic vinegar, and crushed hazelnuts.
