Savory Cauliflower and Corn Stuffing
This guilt-free stuffing takes just 15 minutes to throw together and tastes amazing. Utilizing veggies, nutritional yeast, and fresh rosemary it's not only low-carb, but flavorful too. Try it out with your next turkey meal or all by itself!

Ingredients
- 1 Container Trader Joe's Mirepoix Mix (see notes)
- 1 16 0z Bag Cauliflower and Sweet Potato Rice
- 3/4 Cup Corn, Canned
- 1/4 Cup Turkey or Vegetable Broth
- 3 Tbsp Nutritional Yeast
- 2 Tbsp Parsley, Chopped
- 1 Tbsp Fresh Rosemary, Chopped
- 3 Tsp Fresh Minced Garlic
- 2 Tsp Onion Powder
- 1/2 Tsp Ground Thyme
- 3/4 Tsp Salt
Instructions

Heat two large skillets on medium heat.

In the first skillet add the mirepoix mix and corn. In the second skillet add the riced cauliflower and sweet potato. Cook for 5 minutes stirring occasionally.

Next add half of each of the seasonings listed above to each skillet. Then add half of the remaining ingredients (nutritional yeast and broth) to each skillet. Cook and additional 5 minutes or until veggies are tender and broth is soaked up.

Add additional salt and pepper to taste and serve!
Notes
- If you don't have access to Trader Joe's Mirepoix Mix you can also chop up 1/2 yellow onion, 3 carrots, and 3 celery stalks.
