Springtime Sweet Potato Sliders with Fruit and Nuts
These sliders have a crazy spin! Not only do they utilize sweet potatoes as buns and homemade turkey patties, they are also filled with sweet raspberry preserves, crisp green apple, microgreens, and crunchy pecans. They are a sweet and savory crowd-pleaser. Try them out as an appetizer or a unique meal!

Ingredients
Turkey Burger Patties:
- 16 Ounces Ground 99% Lean Turkey
- 1/3 Cup Trader Joe's Almond Mozzarella Style Shreds (or another low-fat cheese)
- 3 Cups Spinach
- 1 Tbsp Egg Whites
- 2 Tsp Fresh Minced Garlic
- 1/2 Tsp Salt
- 1/8 Tsp Black Pepper
Toppings:
- 5-6 Tbsp Trader Joe's Organic Reduced Sugar Raspberry Preserves
- 1/3 Cup Chopped Pecans
- 1 Small Green Apple, Sliced Thin
- 1 Cup Microgreens or Sprouts
Sweet Potato Bun:
- 1 Extra Large Sweet Potato (at least 8 ounces)
- Coconut Oil Spray
Instructions

Preheat the oven to 425 degrees Fahrenheit and prepare a large baking sheet by spraying lightly with olive oil.

Begin slicing your sweet potato into 1/4-1/2 inch thick disks. Bake for 15-20 minutes. Set aside once done.

Meanwhile, heat a large skillet on medium heat and add spinach. Cook until wilted then put it in a medium mixing bowl.

Add all remaining turkey burger ingredients to the medium mixing bowl and mix until evenly distributed.

Using your hands or a large spoon, make 16 equal-sized patties from the burger mixture (about 1 ounce each). You will want the patties to be thick and tall so that they fit on the sweet potato buns.

Cook patties on a large skillet on low-medium heat, keeping them covered with a lid. Patties should be cooked for about 5 minutes on each side, but this will depend on how thick they are.

Now that all your slider components are ready, assemble each slider using 2 pieces of sweet potato, a few slices of apple, 1 tbsp of microgreens, 1 tsp raspberry preserves, 1 tsp chopped pecans, and one turkey patty.

Notes
• For the almond cheese I highly recommend Trader Joe's Almond Mozzarella Style Shreds due to the macronutrients, taste, and meltability. You can also use a mild tasting soy or milk-based cheese.
