Tropical Spinach Salad with Kiwi Lime Dressing
This sweet salad is like a mini-vacation on a plate! It's full of delicious tropical fruits like plantains and mango and it's topped with a sweet Kiwi Lime Dressing.

Ingredients
- 12 Ounces Spinach, Chopped
- 10 Ounces Broccoli, Steamed
- 2 Plantains
- 2 Small Mangoes
- 3/4 Large Avocado (1/2 cup)
- 14 Ounces Tofu
- 3 Tbsp Balsamic Vinegar
- 4 Servings Kiwi Lime Dressing (see notes for recipe)
Instructions

First, remove your tofu from the packaging and gently press with paper towels to remove excess moisture. Cut into 1/2-1" cubes and place in a small container. Add 3 tbsp of balsamic vinegar to the tofu and let marinate while you prepare the rest of the salad.

Then, keeping the peel on, slice the plantain into 1 inch thick discs. Add them to a pot of boiling water and boil for 20 minutes. Drain the water and let cool. Once cool remove the peels and set plantains aside.

If you haven't already done so, steam your broccoli on the stove or in the microwave and chop into small florets.

In a large bowl add all ingredients. Top with your marinated tofu and the Kiwi Lime Dressing (recipe in notes). Enjoy!
