Chimichurri Chicken and Avocado Salad

This bed of mixed greens is topped with bell pepper, avocado, grilled chicken, onion, and super healthy, oil-free Chimichurri Dressing.

Ingredients

  • 4 Ounces Grilled Chicken Breast
  • 2 Cups Mixed Greens
  • 1/4 Cup Red Bell Pepper, Chopped
  • 3 Tbsp Red Onion, Chopped
  • 2 Tbsp Avocado
  • 1 Serving Chimichurri Dressing (see notes)
  • Cilantro (optional)

Instructions

  1. Fill a small salad bowl with all of the ingredients above. 

  2. Toss in the dressing and sprinkle on some cilantro (if desired) and you have yourself a meal!
