A light and refreshing kale salad with simple, wholesome ingredients and a homemade dressing.
Put kale in a salad bowl and then massage it between it your hands for 1-2 minutes.
Dice 1 tbsp avocado and half of an apple then add it overtop of the kale.
Sprinkle feta and dried cranberries into the salad.
In a very small bowl or measuring cup, mash remaining avocado until fairly smooth. Add greek yogurt and lemon juice and beat with fork until mixed.
Top salad with your lemon avocado dressing and eat!
