Miso Ginger Salad

This creamy dressing packs a kick of ginger and a touch of sweetness. Made with fresh ginger, greek yogurt, miso paste, and cashews, it is oil-free and low in fat. Try it on top of a broccoli slaw or my Asian Salad.

Ingredients

  • 2 Inch Cube Fresh Ginger
  • 3 Tbsp Fage 2% Plain Greek Yogurt
  • 3 Tbsp Cashews Pieces (25g)
  • 1 Tbsp Miso Paste
  • 1 Shallot (20g)
  • 2 Cloves Fresh Garlic (about 1.5 tsp minced)
  • 1 Tbsp Water
  • 2 Tbsp Apple Cider Vinegar
  • 2 Tsp Erythritol (or coconut sugar)

Instructions

  1. Place all ingredients in blender or food processor and blend until smooth.

  2. Toss with a salad or slaw. Enjoy!
